Gitti´s recipe for Kaiserschmarrn:

Ingredients:
(for 2-4 persons)

  • 4 eggs
  • 500 ml milk
  • 1 teaspoon sugar
  • 1 pinch of salt
  • 350 g flour (smooth)
  • optionally 1 tablespoon raisins
  • 30 g butter or margarine
  • powdered sugar for dusting

Preparation:

Beat milk, yolks and sugar until smooth – then add the flour and stir until you get a doughy consistence. Optionally you can add some rum soaked raisins. Beat the egg whites until stiff and fold into the dough. Pour the dough into a pan together with some melt butter and oil. Brown the bottom side. After turning it, brown the other schmarrn side for approx. 3 minutes. Divide the schmarrn into irregular pieces and dust with powdered sugar. Serve with apple mousse or plum compote.
